Karamolegos Pyritis

Pyritis – Karamolegos Winery | Intense, flinty and a pure Santorini expression

Pyritis from Karamolegos Winery is a powerful, outspoken Assyrtiko from Santorini (PDO). The name pyritis means “flint” and refers to the intense mineral, flinty style of this wine. An impressive terroir wine for lovers of taut, complex whites.

Grapes & origin
100% Assyrtiko from old vines on the volcanic soils of Santorini. The combination of poor soil, strong wind and salty sea air gives low yields and grapes of exceptional concentration and minerality.

Vinification
The grapes are hand-picked and carefully selected. Fermentation takes place mainly in stainless steel tanks, followed by ageing on the fine lees (sur lie) to create extra structure and depth. Minimal intervention, so that the terroir speaks as clearly as possible.

Tasting notes
Clear light yellow with green reflections. On the nose intense aromas of citrus, lime, wet stone and flint, with a subtle saline touch. On the palate taut and powerful, with high acidity, pronounced minerality and a long, dry, smoky finish.

Serving tips
Serve at 10–12 °C. Perfect with oysters, shellfish, grilled fish, ceviche or refined Mediterranean dishes. Ideal for lovers of Chablis or other mineral whites.

Cellaring
Excellent — 8 to 12 years or more. Develops more complexity, depth and subtle honeyed notes with bottle age.
