This Assyrtiko from Santos Wines is a pure, characterful white wine from the volcanic island of Santorini. Made from 100% Assyrtiko grapes grown on centuries-old vines, it reflects the island’s unique terroir perfectly: saline, mineral and intense.

Grapes & origin
100% Assyrtiko from dry-farmed, unirrigated vines up to 80–100 years old. The vineyards lie on the volcanic soils of PDO Santorini, where wind, sea and ash-rich soil together create an unmatched style of wine.

Vinification
Fermentation in stainless steel tanks at controlled temperature. The wine ages for several months on the fine lees to build texture and complexity. No oak ageing — pure terroir in the glass.

Tasting notes
Pale golden yellow with silvery highlights. Aromas of citrus, lime, wet stone and a hint of salinity. On the palate dry, powerful and structured, with lively acidity, a mineral character and a long, fresh finish. Exciting and gastronomic.

Serving tips
Serve at 10–12 °C. Perfect with oysters, razor clams, grilled squid, ceviche, or dishes with lemon, capers and olive oil. Also delicious with sushi or refined vegetarian food.

Cellaring
Can easily age 5 to 8 years. Develops complexity and depth over time without losing its freshness.
