Retsina Malama – artisan natural wine with resin

Retsina Malama is a small-production natural retsina of exceptional quality, made with minimal intervention and maximum expression. This unique wine combines the centuries-old use of pine resin with a natural-wine philosophy — pure, lively and authentic.

Grapes & origin
Made from organic Savatiano grapes from Attica, grown on old, ungrafted vines. The grapes are hand-picked and carefully selected.

Vinification
Spontaneous fermentation with wild yeasts in amphorae or clay vessels. A small amount of natural Aleppo resin is added during fermentation. No fining or filtration, and only minimal (or no) added sulphites. This is retsina in its purest, most living form.

Tasting notes
Cloudy golden yellow (typical of natural wine). The nose opens with notes of citrus, wild herbs, resin and wet stone. On the palate lively and complex, with fresh acidity, light tannins and a soft but present pine resin structure. Funky, but balanced.

Serving tips
Serve lightly chilled at 10–12 °C. Perfect with grilled vegetables, fermented dishes, herb-rich mezze, or paired with Asian food, pickles and smoked fish.

Cellaring
Can evolve for a few years, but is often drunk young for its fresh, natural expression. Once opened, use within 1–2 days.
