Ovilos Red – Biblia Chora | Deep, layered and prestigious, from northern Greece

Ovilos Red is the flagship of Ktima Biblia Chora, a wine that unites elegance, power and complexity. This top wine is a blend of international class with a clearly Greek soul. A wine for special occasions — rich, concentrated and with impressive cellaring potential.

Grapes & origin
A blend of Cabernet Sauvignon and Limnio from the estate’s own vineyards in Kokkinochori, near Kavala in northern Greece. Combining the robust Cabernet with the historic Greek Limnio grape produces a wine with character, structure and refinement.

Vinification
Long skin maceration and controlled fermentation for each variety. Ageing for 18 months in new French oak barriques, followed by bottle ageing at the estate. The wine is bottled unfiltered for maximum expression and depth.

Tasting notes
Deep purple-red. On the nose complex aromas of blackcurrant, plum, herbs, graphite, vanilla, leather and a hint of chocolate. On the palate powerful yet elegant: ripe tannins, lively acidity and a long, silky finish with layers of oak, spice and dark fruit.

Serving tips
Serve at 18 °C. Decanting recommended (an hour beforehand). Pair with game, beef, leg of lamb, stews or truffle dishes. A gastronomic wine for special moments.

Cellaring
Excellent — 12 to 15 years or more. Evolves beautifully in bottle towards greater depth, finesse and complexity.
