Le Sang de la Pierre (the blood of the stone) is the absolute flagship of Aivalis Winery — a powerful, intensely concentrated red wine from Nemea, made from 100% Agiorgitiko. It is the result of extreme selection, very low yields and an uncompromising approach in both vineyard and cellar. A rare cult wine of monumental power and elegance.

Grapes & origin
100% Agiorgitiko from old vines on limestone soils, with extremely low yields (under 400 kg/ha). The grapes are picked only at optimum ripeness, which gives maximum concentration and aromatic intensity.

Vinification
Long skin maceration and slow fermentation at controlled temperature. The wine ages for 24 months in new French oak barriques, followed by extended bottle ageing. Neither filtered nor stabilised — pure nature and pure expression.

Tasting notes
Deep, opaque ruby red. On the nose explosive aromas of blackcurrant, plum compote, cocoa, leather, liquorice, cigar box and oriental spices. On the palate powerful and velvety at once, with a full body, ripe tannins, perfect balance and an endlessly long, spicy finish. An intense, almost meditative wine.

Serving tips
Serve at 18 °C. Decanting recommended (at least an hour). Pair with game, beef fillet, truffle dishes or rich stews. Also wonderful as a wine to contemplate on its own, with no food at all.

Cellaring
Exceptional — 15 to 20 years or more. Gains depth, complexity and finesse over the years.
