The Xinomavro Rosé from Domaine Gerovassiliou is a refined, gastronomic rosé from Epanomi, northern Greece. Made from 100% Xinomavro, it combines freshness, structure and subtle complexity. A rosé with character — elegant, dry and perfectly balanced.

Grapes & origin
100% Xinomavro from the estate’s own vineyards in Epanomi, near Thessaloniki. The influence of the sea and the sandy soils give aromatic finesse and lively acidity.

Vinification
Short skin maceration for the delicate salmon pink colour. Fermentation at low temperature in stainless steel tanks to preserve the fresh, fruity character. No oak ageing — pure, taut and elegant.

Tasting notes
Pale salmon pink. On the nose aromas of strawberry, raspberry, rose petal and a subtle spiciness. On the palate fresh and lively, with fine acidity, a light structure and a dry, elegant finish. More gastronomic than the average rosé.

Serving tips
Serve at 9–11 °C. Excellent with grilled fish, shellfish, Mediterranean salads, light pasta or poultry. Also lovely as a stylish aperitif.

Cellaring
At its best within 2 to 3 years — drink young for optimum freshness and aromatic expression.
