The Monograph Assyrtiko from Gaia Wines is an elegant, lively white wine that shows the pure expression of the famous Greek grape Assyrtiko. It combines fresh citrus aromas with a distinctive minerality and a taut structure — a modern interpretation of a classic variety.
Grapes & origin
100% Assyrtiko from carefully selected vineyards in northern Greece. The combination of sunny days and cool nights gives perfect ripening while preserving fresh acidity.
Vinification
The grapes are harvested at optimum ripeness and vinified in stainless steel tanks at low temperature. This keeps the fresh aromas and the natural minerality of the grape fully intact.
Tasting notes
Clear light yellow with green reflections. On the nose aromas of citrus, lime, green apple and white flowers with a subtle mineral touch. On the palate fresh and lively, with crisp acidity and a long, refreshing finish.
Serving tips
Serve at 8–10 °C. Perfect with fish dishes, shellfish, sushi, salads or light Mediterranean food. Also lovely as a fresh aperitif.
Cellaring
3 to 5 years — keeps its fresh character and can develop extra complexity with a short spell in bottle.
