Ritinitis Nobilis is an elegant, refined retsina from the renowned house Gaia Wines. This wine redefines what retsina can be — fresh, mineral, with a subtle use of resin that strengthens the character rather than dominating it.

Grapes & origin
100% Roditis from high-altitude vineyards in the northern Peloponnese. The combination of limestone soils and cool mountain air gives freshness, finesse and clean aromas.

Vinification
Fermentation at low temperature in stainless steel tanks. During fermentation a small, precisely measured amount of natural Aleppo pine resin is added. Gaia uses modern vinification techniques to create a clean, fresh and elegant style of retsina.

Tasting notes
Light yellow. Delicate aromas of citrus, lime blossom, rosemary and a refined touch of pine resin. On the palate dry, fresh and lively, with a lightly saline undertone and an elegant, herbal finish.

Serving tips
Serve chilled at 8–10 °C. Perfect with mezze made with fresh herbs, grilled courgettes, fried sardines, feta with olive oil and oregano, or light Asian fusion dishes.

Cellaring
Develops nicely within 2 to 3 years of bottling. Ideal drunk young and fresh.
