Manitaria krasata is a popular Greek mezze in which mushrooms are cooked slowly in an aromatic sauce of white wine, olive oil, garlic and fresh herbs. The dish is simple, flavourful and shows perfectly how Greek cooking creates a great deal of flavour from very few ingredients. Ideal as a starter, a side dish or part of a generous mezze table.

Clean the mushrooms and halve the large ones.

Heat the olive oil in a large frying pan.

Sauté the onion and garlic until translucent.

Add the mushrooms and fry over a high heat.

Let most of the released liquid evaporate.

Deglaze with the white wine.

Add the oregano, salt and pepper.

Simmer gently for about 15 minutes.

Add the lemon juice.
- 10
Sprinkle with fresh parsley just before serving.
