About this dish
What is Fava?
Fava is one of the oldest and best-loved dishes in Greek cooking. Despite the name, fava is not made from broad beans but from yellow split peas. The island of Santorini in particular is famous for its fava, thanks to the volcanic soil the peas are grown in. The result is a silky purée with a rich, lightly sweet flavour that works perfectly as a mezze, a starter or a light meal.
