Slice the aubergines and potatoes.

Fry or roast them until golden brown.

Fry the onion and garlic.

Add the mince and brown it.

Add the wine, tomatoes and spices.

Simmer for 30 minutes.

Make the béchamel.

Add the eggs and cheese.

Build up layers of potato, aubergine and meat sauce.

Finish with the béchamel.

Bake for 45 minutes at 180 °C.
