Karidopita is one of the best-loved traditional desserts of Greece. This light walnut cake is enriched with cinnamon, clove and citrus aromas and soaked in a delicious syrup after baking. The result is a soft, moist cake with a rich, nutty flavour that goes perfectly with a cup of Greek coffee. Karidopita is often served on holidays, at family gatherings and on special occasions.

Preheat the oven to 180 °C.

Whisk the eggs and sugar until light.

Add the oil, milk and vanilla.

Mix the flour, baking powder, cinnamon and cloves.

Add this gradually to the batter.

Add the walnuts and orange zest.

Pour the batter into a greased tin.

Bake for about 40 to 45 minutes until golden brown.

Meanwhile make the syrup by simmering all the ingredients for 5 minutes.

Let the syrup cool.

Pour the cold syrup over the warm cake.
