KASERI PROIKAS is a cheese with a protected designation of origin (PDO). It has been made for more than a century at the PROIKAS dairy in Sohos, Thessaloniki, to the same traditional recipe, exclusively from selected Greek sheep’s and goat’s milk of native breeds from free-ranging animals in the region, without additives or preservatives. The rich, characteristic taste of kaseri and its distinctive finish come from many months of maturing at low humidity. KASERI PROIKAS (PDO) is the most established authentic kaseri on the Greek market, with a considerable presence internationally, and has won international awards several times:

It is eaten as a table cheese, after standing out of the refrigerator for half an hour so all its aromas come forward, alongside a glass of wine, as a snack with a Thessaloniki bread ring, in sandwiches and on toast. It can also be made into saganaki with tomato jam, used as a filling in pastries and pies, and as an ingredient in soufflés, gratins and pastitsio.
